Instructions

Cooking Instructions:

1. Making the Batter:

  • Remove moisture from vegetables and fish.
  • Mix 500g of frying powder with about 500ml of cold water (add 800ml of water for tempura) and stir until there are no lumps.
  • If frying ingredients release water, coat them with dry frying powder first, then dip them into the batter to ensure the batter adheres well and the coating is crispy.
  • The batter should be thin for vegetables and thick for seafood.
  • Coating food with too much batter can make it less crispy.
  • Prolonged soaking in the batter can result in a less crispy texture.
  • Repeated frying with fresh oil ensures a crispier texture.

2. Frying Method:

  • For vegetables, use a temperature of 150°C to 160°C. For seafood, use a temperature of 170°C to 180°C for crispier and more delicious results.

[Important Notes for Frying]

  • When frying food with a high moisture content, set the temperature slightly lower than usual.
  • Ensure the oil temperature is around 150°C to 160°C after adding the ingredients, as the temperature will drop.
  • Raise the temperature to 170°C to 180°C to achieve the optimal frying conditions.
  • Frying twice with fresh oil results in crispier and more delicious fried foods.
  • Fry food for the first time at 150°C to remove moisture, and then fry again at 180°C to make it crispy.
  • Frying twice enhances the crispiness, allowing you to enjoy crispy and savory fried dishes.

How to Make Tempura Sauce

  • Mix 1 tablespoon of Ottogi Katsuobushi Noodle Soup Base and 2 tablespoons of water with an appropriate amount of grated radish to create a delicious tempura sauce.
