1. Dashima Broth (다시마육수)
Make a warm and mild broth using kelp.
Ingredients:
- Dried kelp pieces (6g)
- Anchovies (20g)
- Water (5 cups, about 1 liter)
Instructions:
- Wipe the kelp lightly with a damp cloth.
- Add the kelp and anchovies to water and bring to a boil.
- Once it starts boiling, simmer for 5 more minutes.
- Remove the kelp and anchovies, and use the broth as desired.
*Use the broth for soups, stews, noodles, etc.*
2. Dashima Salad with Spicy Vinegar Dressing (다시마초무침)
Enjoy the crunchy texture of kelp with a tangy, spicy dressing.
Ingredients:
- Dried kelp (15g)
- Red chili powder (1 tbsp)
- Vinegar (3 tbsp)
- Sugar (1 tbsp)
- Soy sauce (1 tbsp)
- Garlic (1 tsp, minced)
- Green onions (1 tbsp, chopped)
- Sesame oil & sesame seeds (as needed)
Instructions:
- Soak the dried kelp in warm water for 10 minutes and slice into bite-sized pieces.
- Mix all other ingredients to make the sauce.
- Pour the sauce over the kelp and mix well before serving.
3. Crispy Fried Dashima Chips (다시마튀각)
Enjoy crispy kelp as a savory snack or side dish.
Ingredients:
- Dried kelp (40g)
- Cooking oil (150ml)
- Sugar, salt (as desired)
Instructions:
- Wipe the surface of the kelp and cut into small pieces.
- Heat oil in a frying pan and fry the kelp until crispy.
- Remove oil by placing them on paper towels.
- Sprinkle with sugar or salt and serve.
4. Dashima and Beef Seaweed Soup (다시마쇠고기무국)
A nutritious soup with rich flavors from beef and kelp.
Ingredients:
- Dried kelp (6g)
- Beef (sliced, 100g)
- Radish (100g)
- Water (5 cups, about 1 liter)
- Soy sauce, garlic, sesame oil (as needed)
Instructions:
- Stir-fry the beef with a bit of sesame oil for about 3 minutes.
- Add sliced radish and stir-fry briefly.
- Add water and bring to a boil.
- When the radish becomes tender, add soaked kelp (cut into pieces).
- Season with soy sauce, garlic, and other seasonings to taste.
